A PULLED MEAT WRAP WITH DILL SAUCE

INGREDIENTS ( MISO AND RICE MIXTURE )

  • 1 heaping cup of cooked rice

  • 1/3 cup white miso

  • 1 tsp maple

  • 2 heaping tbsp mushroom powder

  • 1/2 tsp agar powder

  • 1/2 inch wedge onion

  • 1 cup soy milk
     

DIRECTIONS

 

  1.  ADD ALL INGREDIENTS IN A BLENDER AND BLEND UNTIL NICE AND CREAMY

Note: set aside

INGREDIENTS  

  • 2 1/4 heaping cups vital wheat gluten. 

  • 1/4 heaping cup quick oats

  • Miso and rice mixture ( see above )

     

DIRECTIONS

 

  1.  In a food processor, add the vital wheat gluten and the pureed miso and rice mixture and mix until it comes together.

  2. Divide the dough in half, and put 1/2 at a time in the food processor and mix each half separate till it gets warm and stringy. This can take 3 to 5 minutes on each half. By working in halves this is better for the food processor so you won't damage it. 

  3. Now that the two halves have been processed it is time to wrap each half separately. First, wrap them in parchment paper and then in aluminum paper. This will help keep the bundles securely in place.

  4. Place the two wrapped bundles in a pressure cooker and steam for 1 to 1 1/2 hours. 

  5. Let the bundles cool off a little before tempting to unwrap and shred the meat. 

 

Note: if you make one large bundle rather than two smaller ones, you will need to cook it for 2 hours or more. ( please check the video for more detailed info. )
