Cannellini Bean & Artichoke Crostini

Here is an easy dish you can spead on a table; let it be for guests coming over (great as finder foods or even an appetizer), a picnic lunch, or a simple snack. I can tell you my husband loves this so much he sometimes has it for his dinner! Need I say more!!



Now I can tell you how much of each ingredient you need to use, but the best way to make this dish or any dish is by taste. Your mouth and tastebuds are your best friends. They will not stir you wrong.

TOPPINGS

  • Toasted corn bread *

  • Roasted artichokes in oil

  • chili flakes

  • drizzle of artichoke oil


Ingredients:

  • 1 19 oz. jar cannellini beans

  • 2 medium size roma tomatoes, diced

  • 2 tbsp olive oil

  • 1/2 tsp salt ( or to taste )

  • 2 large pinches of black pepper ( or to taste )

  • 1/4 of a medium size onion, diced

  • small handful of parsley, chopped

  • 4 pieces of roasted artichoke, chopped

  • 2 tbsp artichoke oil


Directions:


  1. In a medium bowl, mix together all ingredients and toss.

  2. Enjoy!
