EGGPLANT BURGER - SAUSAGE PATTY
COOK TILL NICE AND TENDER AND SOFT. DO NOT OVERCOOK.
3 TBSP ( + ) OLIVE OIL
1 1/2 TBSP MONTREAL STEAK SPICE
1 1/2 TBSP MAPLE SYRUP
SALT TO TASTE
ADD 1 COPPED ONION (YOU CAN LEAVE THE SKIN ON).
IN A FOOD PROCESSOR CHOP UP ONE MEDIUM SIZE EGGPLANT
YOU WANT TO BE ABLE TO LEAVE MOISTURE IN THE EGGPLANT.
... COOL OFF FOR LATER USE.
INGREDIENTS

1 cup cooked rice

1 cup rolled oats

1/2 cup maseca corn flour

1/2 cup vital wheat gluten flour

3 tbsp mushroom powder
-
1 heaping tsp agar powder
-
chili flakes ( optional ) to taste

1 tbsp taco seasoning
-
1/3 cup dry red lentil flakes

1 small beet grated
-
2 cloves garlic crushed

add the cooked eggplant and onion mix

3 to 4 tbsp olive oil
DIRECTIONS

In a medium-size bowl, add the cooked and cooled rice, and all the dry ingredients like the rolled oats, corn flour, vital wheat gluten, mushroom powder, agar, chili flakes ( which is optional ) your taco seasoning, and the dry red lentils.

With a large spoon or even your hands mix everything together making sure to break up the rice and incorporating it well.

Now you can add the grated beet, the garlic, the cooked eggplant-onion mix, and finally the olive oil.

You can use your hand to mix this well. If you feel the mixture is still too wet to handle, add a couple of tbsp of vital wheat gluten. That will help your dough come together for you.

With a large ice cream scooper start making your patties and dividing them with small rounds of parchment paper the size of the patty then roll the whole thing with a large sheet of parchment...and then roll that into a large piece of aluminum paper nice and tightly.

Place the roll into a pressure cooker and set it to steam. Make sure you have enough water inside the pressure cooker. Steam your patty roll for 30 to 45 minutes.

If you are using any other type of steamers that you put onto a stove like a basket steamer, you will steam the roll for 1 to 1 1/2 hours. Make sure your water does not evaporate, so do check it often.

After they are cooked you can freeze them in the roll or you can bake, grill or fry them!
